Brioche aux fruits Confits
Dough
50 g. of melted butter
250 g. of flour
tablespoon of sugar
2 eggs
Creme Patissière
50 ml of milk
40 g of maizena or flour
75 g. of sugar
6 egg yolks
1 vanilla sugar
raisins and dried colored fruit (150g)
Heat the milk and the vanilla sugar in a small pan, low temperature.
before it starts boiling, take pan of the heat source.
In a separate bowl beat together , electric mixer, the egg yolks and the sugar, until the mixture is almost white.
Add the maizena or flour to the mixture and continue to mix.
Turn the stove on very low. Continue whisking the mixture until you obtain a thickened composition, like custard.
Mix the flour and the sugar.
Add the 2 eggs and mix.
Add the melted butter.
Continue to knead the dough until you can form a nice round ball.
Divide the dough in three equal parts.
Take one part and roll it out until it is approximately half a centimeter thick.
Fill the form (26 cm).
The left dough you can divide in 4 pieces.
Roll out, spread the custard and sprinkle the mixture of dried fruit and raisins on top of the custard.
Roll it. You will obtain 4 filled rolls of dough.
Cut each roll in small parts.
Depose small parts on the dough in the form.
Bake in a 180 Celsius oven, bake until golden brown
